Healthy No Bake Kit Kat Bars

Hello people! I am back in the states and trying to get back to my normal routine. Whoever said it was easy to do so after a 3 week vacation is a LIAR! Boy has it been difficult. The fact that my birthday is in 4 days and Thanksgiving in 3 probably doesn't help either. I also tend to go a bit overboard for my birthday and have not stopped celebrating since I got back lol.....YOLO!

Every year, we usually celebrate Thanksgiving at my parent's house and I do all the cooking. However, this year we really didn't have anytime to plan anything so we are going to celebrate at my mother-in-law's house. Thanksgiving is the one time a year that I eat whatever I want without a care in the world. This year is a it different. Since I was in Europe 3 weeks and even though I didn't go crazy ( I actually lose weight) my body is actually craving healthy foods. This is why I came up with this easy peezy, and healthy recipe to take to my Mother-in-law's and I figured I would share it with you all. 

Oh and please be advised that this is my first time shooting food and it might not be the best. It is a work in progress. 

 

Healthy No Bake Peanut Butter Kit Kat Crunch Barsusing just one bowl, 5 ingredients and less than 2 minutes! This quick and easy snack or dessert is naturally gluten free, vegan, dairy free,  and can be made sugar free!

The texture of these no bake bars is perfect for those who want in on ALL the action. They are crispy, crunchy, sweet and have pockets of pure chocolate goodness. The combination of Chex cereal to chocolate is on point, and every bite is a flavor explosion!

The chocolate base is made up of four easy ingredients, which allows these bars to firm up nicely and be sliced into moreish pieces. These ingredients are baking chocolate, pure maple syrup, coconut oil and of course, smooth peanut butter.

A sticky sweetener like  maple syrup is key, as it helps firm the bars up, and adds a subtle sweetness. I used the sugar free version. However, if you can find Monk Fruit sweetened maple syrup that would be even better. I couldn't find any at my grocery store. 

 

Ingredients:

3 cups Rice Chex Cereal

1 1/2 cups Lilly's Sugar Free Chocolate Chips

1 cup Peanut Butter ( or any nut butter of choice)

1/2 cup Sugar Free Syrup

1/4 cup Coconut Oil

1 Scoop Protein Powder

 

Instructions: 

  1. Line an 8 x 8-inch  baking tray  with parchment paper and set aside.

  2. Add Rice Chex cereal  in a large mixing bowl and set aside. 

  3. In a microwave safe bowl, combine all your other ingredients and heat until melted. Remove from microwave/off stove and whisk until completely incorporated.

  4. Pour the wet mixture over the Rice Chex cereal and mix until combined. Pour into the lined baking dish and refrigerate until firm (at least an hour). Remove and cut into bars. 

Healthy No Bake Peanut Butter Kit Kat Crunch Bars can be kept at room temperature in a sealed container. They are best kept refrigerated for up to 4 weeks.
