A Fit Galentine's Day Celebration

Staying fit on Valentine's Day and having fun while doing is NOT impossible.

Kevin and I try to opt away from going out on Valentine's. Truth be told you get awful service, overpriced tems and overwhelming crowd. We usually try to do something "out of the ordinary" and doesn't revolve around chocolates and wine. He usually works that night so we end up celebrating on the weekend. 

I am not a fan of how commercialized Valentine's has become. However, I do believe in what it stands for: CELEBRATING OUR LOVED ONES! I don't think it should JUST be about your significant other and you. What about your squad, your girls, your parents, siblings, etc. 

This year I decided to throw a party filled with "good for you" treats but that still taste good. I know health foods get a bad rap and I'd like to change that. There also has to be some game, workout, or just any movement involved in my parties.  I think I must have ADHD because I can't be still and always have to find something to do. I found some great workouts that can be done with a partner and I thought it would be fun to do on Valentine's with my Gals...hence Galentine's Day.

Pomegranate Infused Coconut Water Paleta

INGREDIENTS

• 1 Container Coconut Water
• 1 Container POM POM Pomengrenates

INSTRUCTIONS

1. Pour coconut water into popsicle mold.
2. Gently toss in pomegranates.
3. Freeze Over nIght.

HEART WATERMELON SALAD

 

INGREDIENTS

• 6 large watermelon slices
• ¼ cup yogurt raisin bites
• 2 tbsp. fresh mint leaves
• ¼ tsp. salt
• Black pepper to taste
• 2 tbsp. olive oil
• 1/4 cup rasberries
• Small heart-shaped cookie cutter

INSTRUCTIONS

1. Place watermelon slices on a cutting board and cut out heart shapes using a cookie cutter. (Avoid cutting into the rind.) Each slice should yield about 3 hearts.
2. Gently toss in a bowl with mint,, salt, and a dash of pepper.
3. Arrange on a shallow serving plate, and drizzle with EVOO (extra virgin olive oil). Toss gently the raspberries and yogurt raisin bites.

LITTLE LOVE NOTES

As I high schooler, I would write notes to all my friends even if they were sitting right next to me. I would get uber excited when I would get one in return. 

To properly celebrate this day of love and friendship, I think it’s best done with a heartfelt message. I got  a card  for all my best gal friends and wrote down something that is unique and special about each and every one of them. By the end of the night, they are sure to feel great mentally, physically and emotionally. Happy Valentine's Friends.
