Healthy Cookie Dough

Who doesn't love cookie dough? I remember when I was younger my mom would always yell at me for eating the raw cookie dough. Her exact words were" NO Monika, eso tiene huevo"!  (no Monika that has eggs!) I would get a stomach ache after but gosh darn it, it was so good.  Oh the good ol' times. 

Now the only problem with cookie dough isn't the tummy aches but also the refined sugars and weight gain it causes. Bringing me back to my childhood I wanted to make a cookie dough that was macro friendly and didn't have any eggs so you can it it raw. 


Healthy Cookie Dough

(Yield 10 servings)


  • 1/8 tsp plus 1/16 tsp of salt
  • 1 1/2 cups chickpeas drained
  • 1/8 tsp baking soda
  • 2 tsp vanilla extract
  • 1/4 cup PB2
  • 1/4 cup unsweetened cashew milk (or any other milk of choice)
  • sweetener to taste
  • 1/3 cup lilly's sugar free chocolate chips
  • 2-3 tbsp oats


Place all ingredients into blender and blend.
