Low Carb Flan

I don't like to share my recipes with you guys until I have it completely down packed. This flan took me a little longer than the others to perfect but it finally happened, and when it did boy was it delish. The even funnier thing is I don't even like flan. I actually really hate it. Ok maybe hate is a strong word but its definitely not something I'm going to waste my precious macros on. Now I know what your thinking, "why did you make it?"  Well my Beauty turned Beast friends that is a wonderful question and the answer is because it is one of my mom's favorite desserts. Her birthday is July 4th, she an independant woman. I wanted to do something for her to start her celebration early since she has had a rough year. 

Between the chemo, steroids and all the other medicine, it has caused her to gain a bit of weight so I have her loosely on macros. I say loosely because it all really depends on how she feels. Nonetheless I made her this guiltless flan so she can enjoy and now all of you can too!

Low Carb Flan

(Yield 8 servings)

INGREDIENTS FLAN:

  • 4 eggs
  • 1- 14 oz can coconut milk (full fat)
  • 1 recipe Low Carb Condensed Milk
  • 1 tsp vanilla extract
  • 1/4 cup swerve sweetener

INGREDIENTS CARAMEL:

  • 1/4 cup swerve sweetener
  • 1/4 cup xylitol
  • 2 tbsp water
  • 1 tsp molasses

TOPPINGS

  • unsweetened shredded coconut

 

INSTRUCTIONS:

Preheat oven to 325F and spray 8 small ramekins with non-stick spray. 

Boil water in a medium size saucepan. 

In a large owl, beat eggs until foamy.

Beat in coconut milk, sweetened condensed milk, swerve, shredded coconut and vanilla extract. 

Divide mixture evenly among the ramekins. 

Pour boiling water into baking dish around flans so that the water comes up 2/3 of the ramekin.

Carefully transfer baking dish to oven and bake for 1 hour or until lightly brown on top but still a bit wobbly.

Remove from oven and let cool. Refrigerate until ready to serve. 

 

FOR CARAMEL SAUCE:

Combine xylitol, water and molasses in a small sauce pan over medium heat. Stir continuously until xylitol is melted.

Bring to a boil and then remove from heat. Let cool and thicken slightly. 

Pour over flan.
