Guilt Free Mofongo
2lbs Green Plantains
1/4 cup Turkey Bacon Bits
1 tbsp Garlic Powder
1 tbsp Minced Garlic
Adobo to taste
2 Chicken Bouillon Cubes
6 cups water
Pour the water into a pot and add the bouillons.
Peel the plantains and cut into 1 inch cubes.
Drop the plantain chunks into the boiling water.
The plantains are ready when you can stick a knife through them.
Scoop the plantains into a large mixing bowl and add adobo, garlic powder, minced garlic and bacon bits.
Mash everything together. Can use a potato masher
