Star Spangled Pops

(Yield 5 servings)

INGREDIENTS

  • 1 cup frozen strawberries

  •  1/4 cup coconut water

  • 1 cup greek yogurt

  •  1/4 cup fat free whipped cream

  •  1 pack unsweetened acai 

  • 2 cups coconut water

  • 1 cup blueberries

 

INSTRUCTIONS:

In a food processor, blend strawberries and coconut water. 

Pour into molds and fill 1/3 of the popsicle. Freeze for 15 minutes.

Blend yogurt, whipped cream,  1/3 cup coconut water. Pour into popsicle mold another third. Freeze for another 15 minutes

Blend blueberries, acai and 1 cup coconut water and pour to the top of your molds. Freeze for 1 hour! Take popsicles out of the freezer and run the outside under warm water for 10 seconds. Slip out popsicles and serve!!!

For the charcuterie, I found a star shaped bowl and filled it up with blueberries. Then I used liberty bell cookie cutter for the cheese. I added strawberries, nut mix and toasted pita bread.

The 1 st layer is berries, then I used the Dannon light & fit Vanilla Greek Yogurt and repeated until I reached the top.

I used cherries, yogurt covered pretzel, strawberries and blueberries for this one.
