Spaghetti Squash Casserole

Ingredients:

  • 1 Spaghetti Squash (can sub pasta but will be higher carb)

  • 2lbs Ground Turkey (can sub beyond meat, or ground beed or chicken)

  • 1 Onion, diced

  • 1 tbsp Minced Garlic

  • 1 tbsp Coconut Oil

  • 2 tbsp Italian Seasoning

  • 1/2 cup Shredded Mozzarella

  • 1 Jar Italian Sauce

Directions:

  • Saute onions and garlic in coconut oil, until soft.

  • Meanwhile, roast your Spaghetti Squash**

  • Add ground turkey and cook until pink is gone.

  • Pour Italian sauce in saucepan with the meat mixture.

  • Add all seasonings and spices to mixture.

  • Once squash is cooked, mix it in with the meat.

  • Spray baking dish and pour mixture. Top with cheese.

  • Bake at 350 for 10 minutes and then broil for an additional 5 minutes.

**** How to roast Spaghetti Squash

  1. Wash squash.

  2. Cut in half

  3. Scrape out the seeds

  4. Drizzle inside the squash with some olive oil, salt and pepper.

  5. Place with the opened side down and roast at 400 degrees for 25 minutes.

  6. Once cooked, scrape with a fork.
